The first thing is to consider what type of bricks the oven will be made from. A medium duty firebrick is made up of 35 per cent alumina and 50 per cent silica. This is ideal for the dome of the oven and the floor due to the fact it can heat up rapidly as well as withstand the high temperatures needed to cook something like traditional Neapolitan pizza.
Red clay brick is the brick we typically associate with housing. While it can be used for the dome, it is recommended you do not use it for the floor of the oven as the heat can cause the bricks to crack as well as taking longer to heat up. Concrete bricks are not recommended because they will not withstand the heat.
High duty firebricks are more designed for furnaces, so may not be appropriate for a pizza oven while insulating firebricks can be useful for insulation.
