
How to Make Salmon in a Wood Fired Brick Oven
How To Cook Salmon Mediterranean Style.
I love this dish it’s easy and has fantastic flavor Enjoy!
Ingredients.
- Salmon 8oz filet.
- 8 Artichoke Quartes
- 6 Garlic cloves pre-roasted or not!
- Roasted pepper about 1 whole pepper cut up
- 12 Olives black or green or both
- Cherry tomatoes 6 cut
- Plumb tomatoes 3 whole San Marzano is best !
- Chopped Basil
- 4 oz white wine
- Olive oil 2 oz
- Salt Pepper to taste! Lay it on!
Technique
Heat TheSizzle Pan with olive oil. Don’t burn the oil , Just let it get hot. Use Gloves !
Place salmon on sizzle pan. Lay it down carefully, away from you,so you don’t splash the oil on yourself.
Add the ingredients one by one. Then add the wine and salt and pepper. Be sure to cover with some oil too and fresh basil.
This dish is about the flavors coming together. It loves high heat and lots of char on top.
Place it next to the fire.
While the dish is cooking be sure to turn it around towards the fire so that it cooks evenly. Be careful when moving the dish as not to spill the ingredients. Let it boil up and get lots of char.The salmon will cook through, but don’t over cook it. The salmon should be juicy and flaky.( I like my salmon a little soft in the middle not dry! )
When cooked remove carefully with a large spatula. Plate the salmon and hit with fresh basil be sure to pour whatever juices are in the skillet on top .
Pour yourself a nice glass of wine (white or red the flavors are so good in this dish you can have either) you did good!
