How To Make A Quattro Stagioni Pizza in a Wood Fired Backyard Brick Oven

How to Make Quattro Stagioni Pizza

Quattro Stagioni Pizza or Pizza Quattro Stagioni (four seasons pizza) is a variety of pizza in Italian cuisine that is prepared in four sections or with four diverse ingredients, with each section or ingredient representing each season of the year. It is a very popular pizza in Italy and has been described as a “classic”,”famous and “renowned” toppings or Italian pizza!

Either way, you make toppings or separate it’s an amazing pizza!

  • 1 small dough
  • 4 oz of pizza sauce  hand crushed San Marzano
  • 4 oz of fresh mozzarella
  • 4 oz Artichoke hearts (seasoned or roasted)
  • Fresh sliced mushrooms  Baby portabellas or any fresh seasoned mushrooms
  • Olives your choice
  • prosciutto dip parma
  • Olive oil
  • Parmesan cheese
  • Chopped basil

Top your dough with tomato sauce. Nice and light!  Add you fresh mozzarella, mushrooms, artichokes and olives. Drizzle some olive oil on the pizza.  Be sure you spread the toppings out well you don’t want to make the pie heavy cook well. When done top with prosciutto di parma (its always best not to cook the prosciutto) and fresh chopped basil!

Medium to high flames.

Cook well don’t lay the toppings on too heavy, you always want the pizza to be light and cooked well. When cooking with several toppings remember they need to cook and the toppings need room to cook.  You want to be able to taste each topping as you eat the pie,  less is more sometimes.

This pie has lots of flavors and is incredibly delicious.

  • Incredible ovens! My family has always been searching for a great pizza oven for our backyards and all I can say is WOW! Let me start off by telling you that all of my family owns pizza shops and has for the last 35 years, so novices we are not. We were very excited to see what this little backyard oven could do. My god! Did a better pizza just come out of this oven then at my shop? Are you kidding me!!!!!!! My brother-in-law and I were floored! The crust developed perfectly and the toppings melted right into the sauce. We cooked up some red, green, and yellow bell peppers ahead of time in a cast iron pan in the oven before throwing them on the pie. Did I mention I’m not really a fan of peppers? But something magical happened in this oven between the Smokey wood and the heat turbulence in the dome of the oven I’m guessing. Or maybe it’s some magic at this point, I just can’t be sure. Anyways, now that I love peppers on my pizza I can stand here and say, this oven has got it all. Simplicity for the novice, and the seriousness of a modern pizza chef. I wish I would have gotten one sooner from you guys. Donald LeMay Stone Fired Piizza
