
How To Make Pizza Bianca
Pizza Bianca is a great pizza, easy to do and easy to make. It’s basically a pie made with ricotta cheese and mozzarella. Although in Italy they sell the pie plain with some sea salt and olive oil Like focaccia but with a lighter dough. I prefer the American Style with Cheese, that is very popular and more satisfying to me.
You can also add some Prosciutto to it after it’s cooked. Or cook it with any toppings you like.
- Small dough ball (use our recipe.) open dough ball to 12”
- 6 oz of Ricotta Cheese season with salt pepper, or some garlic if you like and fresh chopped parsley!
- 6 oz Fresh or shredded mozzarella
- 1 tablespoonGrated Pecorino or Parmesan cheese
- 1 oz extra virgin olive oil
Technique
Lay down dollops of Ricotta Cheese. then add some fresh mozzarella
Then add some fresh mozzarella
Drizzle with Extra Virgin Olive oil
Sprinkle with grated cheese.
Top with any toppings you like! If you are going to put prosciutto Di Parma put it on after cooking it is too good to cook!!
Fire Tips
Cook hot and fast (medium flame) while moving the pie around as it brown on its edges.
Crown the pie when it’s done. To crown the top you lift it to the top of the oven for a brief minute towards the dome.
Be careful not to burn it, you really want to char the top but it’s pretty hot up there in the dome, so lift the pie it up for two seconds at a time and check to see if its perfect!
