Grandma Pizza Making
This is a great video on how to make grandma pizza.
The name itself is a nod to simple home-style preparation: baked in a pan, without the benefit of a pizza stone or some other fancy implement. “That’s what Italian grandmothers would make at home, the pizza of the house, the pizza à la Nonna,” says noted NYC pizza expert Scott Wiener of Scott’s Pizza Tours. Grandma Pizza
This pie can be made in any oven so don’t worry either way it will come out great. The pizza is thin and crispy and can be made with any toppings you like. The secret is to get a good bake on the bottom first before you cook the top ingredients. Ofcousres good dough. Oil the pan first ‘lightly with olive oil” stretch your dough out well. It will probably stretch back because of the oil let it relax a few minutes and stretch it out again. I use 28 oz dough in a 16x 16-inch black steel pan here is the link: Pizza Pan 16×16 Cover lightly with a little sauce then foil and let it rise for about an hour in a warm spot. Bake well for about 12 minutes with a temp of 400f (min) covered. Check the bottom in about ten minutes. Make sure it’s browning nicely and almost done. The oil in the pan will get the bottom nice and crispy with the dough will be light and airy. The longer you let it rise the airier it will get. Top with stipes of cheese and sauce and fresh basil.
This is great family pizza! lots of fun thin and crispy and really easy to make.
