The important thing when cooking different foods in your pizza oven is to adjust the temperature accordingly . While pizza needs a very high temperature to achieve a fast perfect  pizza , baking and roasting needs a lower temperature with mare fire control  and a longer cooking time. So you have to learn the art and get  familiar with when is the right time to add wood and how long cooking times are !

What type of wood do  I need ? Wood-fired Ovens

The best wood to use  is seasoned and dried hardwoods. Hardwoods.

One reason hardwoods are better for cooking in a pizza oven is that they are cleaner and last longer than softwoods. The best examples of hardwood are maple, oak, ash, hickory, walnut, birch, and beech. It is also important to have  the wood kiln dried or seasoned for over 1 year and with a low moister content. Other wise your cooking experience will be a smoky and difficult one to say the least! Smaller cuts for smaller ovens and bigger cuts for bigger ovens. When you purchase wood you are usually looking for 14 to 18” cuts about 3 to 4 inches in thickness. It’s always good to have a supply of smaller cuts to add when your trying to control the fire and not looking for such bigger flames. You can always use a small hand ax and split any logs you feel that are to thick and will cause to mush of a flair up in your oven .

 

If you love the aromatic effect wood has on your food then fruitwood is highly recommended and can greatly affect your meal. Fruitwood, as the name implies, comes from several fruit-bearing trees.

Fruitwood includes apple, plum, almond, pear, hickory, maple, pecan, mesquite, chestnut, avocado, alder, apricot, nectarine, and cherry wood.  These woods can really add to the flavor of your next dinner! Although they might cost a little more then standard hard woods its worth the experience.

 

Lets Light A Fire !

It’s best to arrange your fire in the center of your outdoor pizza oven (left to right and front to back). You’ll need about 7-9 sticks of dry kindling, one to two odor-free, non-toxic fire starters, and two to three pieces of seasoned medium or hardwood. On the other hand you may also choose to start your fire a butane torch; this method can be quicker and many find it easier than the traditional approach as well. Stay away from wax and sawdust fireplace starters, as these can affect the flavor of your food.

Once the fire gets started, add 2-3 pieces of wood to help the flame reach the center and front of the dome, without expanding too far out of the oven’s opening. Use seasoned wood that is approximately 3’-4’ in diameter, and about 18’ long Kiln Dried is best! There should be no smoke before the wood catches fire, and the wood should burn fairly easy. Once the fire is well established, keep feeding it more wood, close the door and let your oven get hot  wait for about 20 minutes or so then push the fire to the side and add more wood as needed !!
